Avocado & Egg on Sourdough is a simple, balanced meal that feels a little elevated without any extra effort. With creamy avocado, rich gouda, fresh tomato, and a perfectly cooked egg, this recipe brings together flavor and texture in every bite. Ingredients

  • 1 slice Sourdough
  • 1 slice Gouda cheese
  • 1/4 Avocado
  • 1/2 Roma tomato
  • 1 large Soft boiled egg
  • 1/4 tsp. Everything bagel seasoning

Directions

  1. Toast the bread to your desired texture.
  2. Bring a pot of water to a rolling boil, making sure there’s enough to fully cover the eggs.
  3. If your eggs are cold from the fridge, place them in a bowl of warm water while the pot heats up to help prevent cracking.
  4. Cut your avocado (add lemon juice if you like) and slice the tomato. Season as desired.
  5. Once the water is boiling, reduce to a low simmer and gently add the eggs. Cook for 6 minutes for soft boiled, 8 minutes for jammy, or 11 minutes for hard boiled.
  6. Transfer the eggs to a cold water bath. Once cooled, peel and set aside.
  7. Layer your ingredients with any optional condiments like butter, mayo, hummus, or Laughing Cow cheese. Start with bread, then cheese, avocado, tomato, and sliced egg on top.
  8. Finish with Everything Bagel seasoning or salt and pepper to taste.
