These berry baked oatmeal cups are meal prep friendly, high in fiber, and naturally sweet from the fruit. They're also great for portion control!

Ingredients

  • 2 cups Old-fashioned oats
  • 1½ cups 1% milk (or milk of choice)
  • 2 Eggs
  • 1 tsp. Vanilla extract
  • 1 tsp. Baking powder
  • 1–2 tbsp. Maple syrup or sugar-free syrup
  • 1½ cup Frozen berries
  • Optional: Sprinkle cinnamon
  • Optional: Monkfruit

Directions

  1. Preheat oven to 350°F and lightly spray a 12-cup muffin tin (you’ll fill about 6–8 cups).
  2. In a large bowl, whisk together milk, eggs, vanilla, and syrup.
  3. Stir in oats and baking powder.
  4. Gently fold in berries.
  5. Divide mixture evenly into muffin cups. Add a few extra pieces of fruit on top for color.
  6. Bake 22–25 minutes until set in the center.
  7. Cool before removing. Store in fridge up to 5 days or freeze.
