Ingredients

  • 2 cups diced chicken breast
  • ¼ cup celery, diced
  • 1 cup cherries, halved and pitted
  • ¼ cup roasted and salted shelled pistachios, chopped
  • ⅓ cup plain goat cheese crumbles
  • ⅓ cup nonfat plain Greek yogurt
  • 2 Tbsp honey
  • 1 Tbsp light mayonnaise
  • 1 Tbsp balsamic glaze
  • 1 tsp poppy seeds

Directions

  1. Add the cooked, shredded chicken breast to a large mixing bowl.
  2. In a small bowl, whisk together the Greek yogurt, light mayonnaise, balsamic glaze, salt, and black pepper until smooth.
  3. Add the cherries, celery, and red onion (if using) to the chicken.
  4. Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
  5. Fold in the chopped pistachios and goat cheese just until combined.
  6. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
