Ingredients

  • 1 lb asparagus
  • 10 oz grape tomatoes
  • 4 oz fresh mozzarella pearls
  • 3 tbsp balsamic vinaigrette dressing
  • 6 fresh basil leaves

Directions

  1. Trim the woody ends off the asparagus stalks. Place the trimmed asparagus in a microwave-safe bowl, cover with water, and microwave for 3 minutes. If you prefer softer asparagus, cook for an additional 1 to 2 minutes.
  2. While the asparagus cooks, halve the grape tomatoes and thinly slice the basil leaves.
  3. Once the asparagus is done cooking, drain well and transfer to a large mixing bowl. Add the tomatoes, mozzarella pearls, and balsamic vinaigrette dressing. Toss gently to combine.
  4. Top with fresh basil and serve.
