Ingredients

  • 1 lb. Chicken breast
  • 10.5 oz. Cream of mushroom soup (condensed, 98% fat free)
  • 4 oz. Reduced fat cream cheese
  • 1/2 cup Fat free ultra-filtered milk
  • 1 oz. Ranch dressing mix
  • 10 oz. Mixed vegetables
  • 2 cups diced potatoes
  • Salt and pepper to taste

Directions

  1. Place for chicken breast in the bottom of sprayed crockpot. Season with salt and pepper to your liking.
  2. Add diced potatoes and one bag of frozen mixed vegetables.
  3. In a separate bowl, mixed together the packet of ranch seasoning mix, milk, and cream of mushroom soup. Once mixed, pour over the chicken and vegetables.
  4. Add cubed, cream cheese to the top.
  5. Cover and cook on low 6 - 7 hours or high 3 - 4 hours.
  6. Once chicken is fully cooked shredded in the crockpot.
  7. Stir everything together until combined and creamy.
