Tender, juicy meatballs smothered in a rich, savory French onion gravy and topped with melted cheese. It’s everything you love about that classic soup, turned into an easy, comforting dinner the whole family can enjoy.
Optional: fresh parsley for topping
1. Prepare the frozen meatballs according to package directions. An air fryer works especially well if you want them browned on the outside.
2. While the meatballs cook, add the beef broth and French onion soup mix to a large skillet. Whisk together and bring to a gentle simmer.
3. In a small bowl, whisk the cornstarch and cold water together. Pour into the skillet and simmer for 2–3 minutes, stirring until the sauce thickens.
4. Reduce the heat to low. Place the Greek yogurt in a small bowl and stir in a few spoonfuls of the warm sauce. Slowly stir this mixture back into the skillet until the sauce is creamy and smooth. Don't allow it to boil after adding the yogurt.
5. Add the cooked meatballs to the skillet and toss until they're completely coated in the French onion sauce.
6. Sprinkle the cheese over the meatballs. Cover for 2–3 minutes, until melted.
7. Finish with black pepper and fresh parsley if desired.
