Healthy Ground Turkey Taco Salad

Ingredients

  • 1 lb lean ground turkey (93% lean or higher)
  • 1½ tbsp taco seasoning (low sodium if possible)
  • 4 cups chopped romaine or mixed greens
  • 1 cup chopped tomatoes
  • ¾ cup canned black beans, rinsed and drained
  • ½ cup corn kernels (fresh, canned, or thawed)
  • ⅓ cup plain nonfat Greek yogurt
  • ½ cup salsa
  • ¼ cup crushed baked or reduced-fat tortilla chips
  • Optional: lime wedges, chopped cilantro

Directions

  1. Heat oil or spray in a large skillet over medium heat. Add ground turkey, season with taco seasoning. Cook 7–9 minutes, breaking it up, until browned. Add corn and beans to a pan, heat on medium-low heat until warmed through.
  2. Make the sauce: Mix Greek yogurt and salsa in a bowl while the meat is cooking.
  3. Once meat is finished and sauce is made, it’s time to make the bowls. Divide taco meat into 4 large bowls. Top with lettuce, tomatoes, black beans, corn. Give everything a good mix.
  4. Add finishing touches: Sprinkle crushed chips on top. Add lime or cilantro if using.
  5. Serve warm or cold.
