High-Protein BLT Ranch Pasta Salad

Ingredients

Salad

  • 8 oz protein pasta (such as Barilla Protein+ or chickpea pasta)
  • 6 slices center-cut bacon or turkey bacon, cooked and crumbled
  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely diced

Greek Yogurt Ranch Dressing

  • ¾ cup plain nonfat Greek yogurt
  • 1 tbsp ranch seasoning
  • 1 tbsp milk (or water), as needed to thin
  • 1 tsp lemon juice
  • Black pepper to taste

Directions

  1. Cook pasta according to package directions. Drain and rinse under cold water until completely cooled.
  2. In a small bowl, whisk together Greek yogurt, ranch seasoning, milk, lemon juice, and black pepper until smooth.
  3. In a large bowl, combine cooled pasta, bacon, tomatoes, and red onion.
  4. Add dressing and toss until evenly coated.
  5. Gently fold in the romaine just before serving.
  6. Refrigerate until ready to enjoy.
