This fresh and colorful salad combines sweet pineapple, juicy pomegranate arils, creamy avocado, and crisp spinach for the perfect balance of flavor and texture. Tossed with lime juice and olive oil, it’s a light and refreshing dish that works as an easy lunch, side salad, or summer favorite.

Ingredients

  • 4 oz pomegranate arils
  • 1 cup pineapple chunks
  • 1 Hass avocado, diced
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • 3 cups baby spinach

Directions

  1. Rinse the baby spinach and pat dry with a paper towel or use a salad spinner. Set aside.
  2. Cut the avocado in half, remove the pit, peel, and dice into cubes.
  3. Drain the pineapple chunks and pomegranate arils if needed. Fresh fruit can also be used.
  4. Add the spinach to a large bowl. Squeeze the juice of 2 limes over the spinach and drizzle with olive oil.
  5. Add the pineapple chunks and pomegranate arils, then toss to combine.
  6. Gently fold in the avocado chunks and serve immediately.
