Protein Banana Pudding

This protein filled, healthy banana pudding tastes like dessert! You’d never know it was good for you!! It’s the dessert you could eat for breakfast!

Ingredients

  • 12 mini vanilla wafers
  • 2 bananas, sliced into 1/4 inch rounds
  • 1 cup plain non-fat Greek yogurt
  • 1 cup 2% cottage cheese
  • 1 scoop vanilla protein powder
  • 1/2 cup whipped topping, for garnish

Directions

  1. Add the wafers to a plastic bag and crush them up into pieces - make sure to set 4 aside before doing this for the garnish!
  2. Add the Greek yogurt, cottage cheese, and protein powder into a food processor or blender.
  3. Time to layer: To 4 glass cups, add 2 tbsp crushed up vanilla wafers, followed by 4-5 banana slices, about ¼ cup of the vanilla "pudding", and then repeat with another layer of wafers, banana slices, and more pudding.
  4. Add a few more wafers to the top, followed by a large dollop of whipped topping and a couple wafers.
