Ingredients

  • 1/4 Red bell pepper
  • 4 medium Radishes
  • 4 Baby carrots
  • 1/4 medium Sweet potato
  • 1/4 medium Yellow squash
  • 1/4 cup Broccoli florets
  • 2 Brussels sprouts
  • 1/4 ear Corn on the cob
  • 1/4 cup Cauliflower
  • 1 Baby medley potato
  • 1 Purple creamer potato
  • 1/4 cup Red cabbage
  • 1 spray Olive oil cooking spray
  • 1/4 tsp. Italian seasoning

Directions

  1. Cut your vegetables into large chunks.
  2. Toss them in a bowl with cooking spray, Tuscan seasoning, salt, and pepper to taste.
  3. Preheat the oven to 400°F.
  4. Line a baking tray with foil. Place the potatoes on the tray, skin side up, and cook for 18 to 20 minutes.
  5. Remove from the tray and set aside. Add the radishes, carrots, Brussels sprouts, corn, peppers, and cauliflower to the tray. Cook for 12 to 15 minutes.
  6. Remove those from the tray and set aside. Then add the broccoli, cabbage, and yellow squash to the tray. Cook for 8 to 10 minutes.
  7. Once everything is cooked, thread onto wooden or metal skewers.
