Ingredients

  • 1 medium eggplant
  • 1 large egg
  • 1/3 packet Seasoned Coating Mix Extra Crispy

Directions

  1. Wash the eggplant and cut it into fry-shaped sticks.
  2. Crack the egg into a shallow bowl and whisk until well combined.
  3. Place the seasoned coating mix in a shallow dish or resealable bag.
  4. Dip each eggplant stick into the egg, then coat evenly with the seasoned coating mix.
  5. Arrange the coated eggplant fries in a single layer in the air fryer basket, making sure they are not overcrowded.
  6. Air fry at 400°F for 10 to 12 minutes, shaking the basket halfway through cooking, until golden brown and crispy.
  7. Allow to cool slightly before serving.
