Smashed Grilled Potato Salad

Crispy grilled potato salad with tons of flavor. Great for cookouts this summer!

Ingredients

  • 1½ lbs baby potatoes
  • 1 tsp olive oil
  • Salt & pepper

Greek Yogurt Herb Dressing

  • ¾ cup plain nonfat Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • ½ tsp garlic powder
  • Salt & pepper

Optional Add-Ins

  • Green onions
  • Crispy turkey bacon crumbles
  • Celery for crunch

Directions

  1. Boil potatoes until fork tender, about 5-10minutes depending on size. Drain and cool slightly.
  2. Gently smash each potato with the bottom of a glass or with smasher on grill.
  3. Brush lightly with olive oil and grill over medium-high heat 3–4 minutes per side until crispy and charred.
  4. Mix dressing ingredients in a bowl.
  5. Toss warm potatoes with dressing and optional add-ins.
