Ingredients

Salad:

  • 8 oz protein pasta (about 2 cups cooked)
  • 1 cup cucumber, diced
  • ½ cup peas (fresh or thawed frozen)
  • ¼ cup red onion, finely diced
  • ¼ cup crumbled fat-free feta (optional)

Green Goddess Dressing (Lightened):

  • ¾ cup plain nonfat Greek yogurt
  • 1 cup fresh herbs (mix of parsley, basil, chives, or dill)
  • 1 clove garlic
  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • 2–3 tbsp water (to thin)
  • Salt & pepper to taste

Directions

  1. Cook pasta as per package instructions. Drain and rinse with cold water.
  2. Blend Greek yogurt, herbs, garlic, lemon juice, olive oil, water, salt, and pepper until smooth.
  3. Combine pasta, cucumber, peas, and red onion in a large bowl.
  4. Pour dressing over and mix until well coated.
  5. Top with feta if using. Chill for 20–30 minutes for best flavor.
