Strawberry Kiwi Fluff Salad

Fluff salad is a popular dessert where I'm from. It's so important that I can make it a lighter version so I don't feel like I'm missing out!

Ingredients

  • 2 cups strawberries, sliced and patted dry
  • 2 kiwis, peeled and sliced
  • 2 cups light or sugar-free whipped topping
  • ⅓ cup plain nonfat Greek yogurt
  • 2 tbsp sugar-free vanilla or cheesecake pudding mix (dry powder)
  • Zest of ½ lime
  • 1 to 2 tsp lime juice
  • 2 tbsp unsweetened shredded coconut, lightly toasted

Directions

  1. Wash, dry, and dice the strawberries and kiwi.
  2. In a large bowl, mix the whipped topping, Greek yogurt, dry pudding mix, lime zest, and lime juice until smooth and fluffy. The mixture will thicken slightly.
  3. Pat the strawberries dry to help prevent the fluff from becoming watery.
  4. Gently fold the fruit into the fluff mixture until evenly coated.
  5. Refrigerate for 1 to 2 hours to thicken.
  6. Top with toasted coconut before serving.
